Eggs alla Amatriciana

2 thick slices of baguette, ciabatta or similar style bread
2 Eggs
1/4 of a yellow onion chopped finely
1/4 cup of pancetta chopped small
1/2 cup of italian San Marzano tomatoes, pureed
olive oil or butter
basil leaves
1 tsp salt (to taste)
pepper
crushed red pepper
grated parmesan cheese

Put the slices of bread in the toaster or over to warm/lightly brown.

In a frying pan or skillet, drizzle a small amount of olive oil or butter into the pan and add the pancetta. After a few minutes add the onion and let it simmer on low to cook the onion and the pancetta. Add the tomatoes, basil and salt. After the sauce cooks for about 5 minutes on medium heat, crack the eggs over the sauce like a fried egg. Add the pepper and crushed red pepper on top of the yolks. Simmer until eggs are cooked to desired firmness.

Serve with the toast and a sprinkle of parmesan cheese.
