Mama’s Chocolate Chip Cookies

The most important thing to remember is to use the best ingredients and to make these cookies with lots of love.

2 cups of unbleached all purpose flour
1 cup organic dark brown sugar
3/4 organic evaporated cane sugar (not bleached white sugar)
2 brown extra large eggs
2 sticks of unsalted butter – softened – leave it out of fridge for over 1 hour
2 tsps of pure bourbon or madagascar vanilla extract
1 tsp salt
1 tsp baking soda
1 package of Ghiradelli or Lindt Semi Sweet chocolate chips

Preheat oven to 350 degrees.

Place butter and sugar into a large mixing bowl and mix with egg beaters or a large mixer until smooth. Add eggs and vanilla. Mix. Add baking soda and salt to flour and slowly pour into bowl while mixer continues. When mixture becomes thick and dough like, turn off mixer and spoon in chips with a spatula until chips are evenly distributed.

Grease cookie sheets and spoon one teaspoon of mixture onto sheet about 1.5 – 2 inches apart. Bake for 10-15 mins (depending on your oven and how dark you like your cookies).

Let cool for 15-20 mins.

Makes about 60 cookies.

Serve them warm to the ones you love.
