Polpette (Meatballs)

2lbs ground beef or veal
2lbs ground pork
1 large yellow onion chopped finely
2 eggs
1 cup of italian style bread crumbs
1/4 of chopped italian parsley
2 tbsp sea salt
1 tbsp black pepper

Add mixture together mix with hands until fully mixed. Take small amounts of meat mixture and roll into balls about 2-3 inches in diameter. Place in sauce while sauce (see Mama’s tomato sauce recipe) is cooking. Stir sauce and meatballs carefully.

Cook on low simmer for 30 – 40 mins.

Serve alone or over pasta.

Makes 30-40 meatballs.
