Mama’s Spaghetti Pie

A great recipe for left over spaghetti and tomato sauce.

1/4 cup of Mama’s tomato sauce (see recipe)
1/4 lb of cooked spaghetti or capellini
3 large eggs
3 or 4 basil leaves
2 dinner plates

cut up cooked pasta into small pieces
beat eggs in a large bowl
add tomato sauce and pasta
mix together

put butter in large omelet pan or fryer to cover the bottom
add egg mixture
tear basil leaves and place onto spaced apart
cover and cook on medium to high heat until bottom is lightly browned
use spatula to loosen edges of egg mixture from sides
slide onto dinner plate
use another to flip pie over
slide back into fryer – cover and cook on medium heat unti 2nd side is lightly browned

Slide onto dinner plate.
Cut into pie slices

Serves 3-4 people
