Insalata con bisteca e gorgonzola

4-6oz of tri tip or filet mignon
1/2 cup of balsamic vinegar
2 tbsp sea salt
2 tsp pepper

Slice steak into 2-3 inch slices. Pour vinegar into saute pan. Add salt and pepper. Saute until meat is medium rare (or as you prefer).

Salad –
2 big handfuls of spinach leaves, cleaned and dried
2 sliced persian cucumbers
1/2 small red onion – sliced
Approx 3 inch small wedge of gorgonzola – crumbled
3 tbsp of pine nuts

Add salad ingredients together, pour steak slices over (you can use the extra balsamic from the pan). Add the dressing.

Dressing
4 tbsp extra virgin olive oil
3 tbsp balsamic vinegar
1/2 tsps dijon mustard
sea salt, pepper to taste

Serves 2-3 people.
