For my Russian friends…
1 large yellow onion
1 35 oz can of peeled San Marzano tomatoes
2 cups of Vodka
1/2 cup cream
2 tbsp sea salt
1 tbsp pepper
1 cup of peas (can be fresh or frozen)
12 crimini mushrooms
Chop mushrooms coarsely and saute in olive oil until soft and brown. Put aside.
Chop onion finely and saute in a large saucepan in olive oil on medium to low heat. Do not let onions brown, only soften and get “transparent”.
Add vodka. Allow alcohol to cook out for about 3-5 mins, stirring occasionally.
Puree tomatoes in blender. Add to saucepan.
Add salt, mushrooms, peas and pepper.
Cook for 20-30 minutes. Stir occasionally.
At the end, stir in cream.
Serve over penne cooked al dente.
